Forgive me if I get technical here, but does ply really matter?

I mean, carpentry has plywood and fiberboard, most commonly seen as medium-density fiberboard (MDF). MDF is essentially 3/4″ thick, heavy stock unbleached paper, where 3/4″ ply is 5 plys (plies?) cross-grained.

What I’m getting at is: why not have one, thick, soft ply?
